This week marks the seventh week of working at home for me. And yes, it feels like it’s been seven years. There isn’t a single story, whether inspiring or heartbreaking, that I can add to the conversation at this point. The media is running out of things to talk about and so am I.
But at this point we brave soldiers are carrying on, taking care of business and continuing to hope that the next stage in this crisis is less restrictive than the previous one. We are still in the waiting phase. I feel like even those of us in states that have eased some of their restrictions are still very skeptical of going back to the way things used to be. As if that’s ever going to happen.
One thing consistent during this time is our need to numb our troubles with alcohol. Sorry if that sounds inappropriate, but it’s true. When you’re home all day, you need to have something to look forward to each evening. And I look forward to my nightly cocktail.
So in continuing with my tropical theme of late, here’s an easy recipe. I tried this with Bacardi lime rum and Deep Eddy’s lemon vodka and I liked the lemon version better. “Lemon in the Coconut” just didn’t have the same ring to it. Try it both ways!
Lime in the Coconut
- 2 oz Bacardi Lime rum
- 2 oz Malibu coconut rum
- 2 oz pineapple juice
Fill a shaker with ice, then add all ingredients. Shake vigorously and strain into a martini glass. Garnish with a pineapple wedge and enjoy!
