If you haven’t noticed, I am on a bit of a rum kick lately.  Historically vodka has been by spirit of choice, but for some reason or another I have noticed the level of my Bacardi bottle has been descending a lot faster than that of my Skyy vodka.  I think  what started it all was my discovery of the pure, tart flavor of the classic lime daiquiri.  (This link takes you to my post on the Hemingway daiquiri, which is equally as good as a classic daiquiri with just a couple of extra ingredients.)  Daiquiris have been around forever, but my previous experience with them usually involved sickeningly-sweet flavored versions or frozen renditions with more slushy ice than booze.   The classic daiquiri, with its limited ingredients, really brings out the taste of the rum and makes for a straightforward, uncomplicated cocktail.

But there’s always room for variety. I have recently been enjoying spiced rums and black rums, Kraken and Sailor Jerry’s to be specific.  And coconut rums.  And Myer’s rum.  Sometimes I enjoy them separately, and sometimes I mix them all up together.  There are so many different varieties, and as Willy Wonka says, you are only limited by your imagination. Don’t quote me on that, he didn’t say it exactly that way, but I know he sang a song about imagination- you get the point.

 

So if you want a change from the classic daiquiri, the Fruity Tooty Iced Tea or the Rum Runner,  try my latest concoction, the Tropical Torpedo.  The combination of flavors in this drink is really delightful.  It’s not too sweet but has that tropical flavor that will definitely remind you of swaying palm trees and sandy beaches.  This torpedo will blast you off to happy land.
 
Tropical Torpedo
2 ounces black spiced rum (I used Kraken)
1 ounce coconut rum
1 ounce Deep Eddy’s peach vodka
1/2 ounce triple sec
2 ounces each cranberry and pineapple juice
 
Pour all ingredients over ice in a tall glass and enjoy!!
