I was perusing my liquor cabinet in search of inspiration the other day. I felt like I had been concocting too many similar-tasting cocktails and I wanted to mix things up a little. I spied a bottle of vanilla rum in the back corner and thought about what would pair up nicely with it when I caught sight of a bottle of banana liqueur. Vanilla, bananas….naturally the only thing left to add had to be RumChata! The three spirits just struck me as a tempting medley, and after preparing the Spiked Banana, (and I was sipping on it as I wrote this post), I think I discovered a terrific flavor combination. Kind of like a cinnamon-y banana milkshake, but with booze. I added just a smidgen of half and half for extra creaminess. Yes, it’s probably a gazillion calories, but it’s also a nice change from all the tart citrus-y libations I’ve been coming up with lately. And if you drink it after dinner, it’s technically dessert, and everyone is entitled to dessert a few times a week. So as the wife told her husband in the old Alka Seltzer commercial years ago, “Try it, you’ll like it!” I really think you will.
The Spiked Banana
2 ounces RumChata
1 ounce vanilla rum
1 ounce banana liqueur
Splash of half and half if desired
Pour all ingredients into a glass filled with ice and enjoy!! I know I did.
