Frozen Peach Colada

I am just finishing up Week 12 of working from home.  I have been able to go to the office occasionally to take care of things that I can’t handle at home (our home printer?  Fuggehdaboudit)  I drove in yesterday and it amazes me how a drive I once traveled five days a week now seems like a journey to the center of the earth.  There’s no rush hour these days but the amount of miles is the same and I’m not used to driving long distances anymore.  Whenever I am frustrated about being at home 95% of time, I try to think of the things I appreciate, and the lack of a commute is in my top five.

It’s gotten super hot here on the East Coast this week.  We went from chilly and damp “Spring” in May to full fledged hot and humid Summer in June.  That’s why I thought a refreshing frozen cocktail might be just the ticket this week.  The Peach Colada marries two of my favorite flavors, peach and coconut.  I use coconut milk instead of the Coco Lopez Cream of Coconut for a less fattening drink, so if you want a creamier, more rich cocktail, splurge on the Cream of Coconut.  Either way, it’s super delish!

Frozen Peach Colada

2 oz peach vodka

1 oz coconut rum

3 oz peach nectar

3 oz coconut milk

1 cup frozen peaches


Slightly thaw the peaches (I microwave them for about 15 seconds), then add them and the rest of the ingredients to the blender.  Blend until smooth, pour into a tall glass and garnish with a peach slice. I’m not sure how to create the effect of crushed coconut flakes on the glass in this image, but I need to try it. It’s gorgeous!
