Is it just me, or did everyone have to forego their summer vacation plans and have to make do with staycations this year? I’ve seen a few Facebook posts of friends traveling to nice spots, but for the most part, it looks like we are all staying put. I suppose most of us have resigned ourselves to stay safe at home and ride out this Coronavirus storm. It’s okay, really it is. It’s not as if we could really do much even if we WERE able to go somewhere.
If you are a regular reader of this blog, you may recall we had plans for a dream trip to the Greek islands this month. Once it was inevitable that that wasn’t going to happen, we thought maybe we could join our friends in Marco Island, Florida for a few days as a consolation prize. And now that Florida can’t seem to get its act together, that trip has also been scrapped.
So we went to my hometown in Ohio for a couple days over 4th of July weekend. It was fun! Not cruising-in-the-Aegean-Sea-on-a-private-yacht-with-cocktails fun, but it was great to hang out with good friends and be away from home. Then when Florida wasn’t an option, our Ohio friends came out to see us. We took them to the recently revived Longwood Gardens fountain show, rode our bikes through the beautiful Chester County countryside and swam in the ocean at Rehoboth Beach.
I would still love to go somewhere in 2020, but I’m not counting on it. I’m just trying to enjoy summer as much as I can; it’s my favorite season. I love wearing shorts and sandals, being outside on my bike, and enjoying a cocktail or two with friends (in a socially responsible way, of course).
The drink I created while our friends were in town was a meeting of the minds- we were thinking of the Texas Bluebonnets we drank in Ohio and came up with a peach version. I think you will find it to be super yummy, and with the abundance of fresh peaches this season, the ingredients will be easy to find. Let me know if you think it lives up to its name!
Peach de la Resistance
3 oz Deep Eddy’s peach vodka
3 oz club soda
Fresh peach slices, cut into smaller chunks
Fresh mint leaves
Muddle 4-5 fresh peach chunks and a few mint leaves together in the bottom of a rocks glass. (if you don’t have a muddler, you can use a wooden spoon). Fill the glass with ice, then add the vodka and club soda. Mix well and enjoy!!
OK, I definitely have to get some peach vodka. This sounds delicious. I’m eating a fabulous, sweet, juicy white peach right now. And, take heart, I haven’t left home for four months, so even Ohio leaves me with longing. Must go somewhere soon!

Made this last week in Colorado, and it was wonderful! The peaches we bought weren’t quite ripe so we supplemented with frozen too. Delicious!!!
