I’ll admit it, I am a bit obsessed with fruit. I put that recommended daily requirement to shame with the amount of fruit servings I consume every day. In the winter I frequent Costco a lot more often than summertime, due to their direct pipeline to an off-season fruit supply. After I’m gone from this earth, I hope one of the things my kids will say about me (besides the fact that I was the best mom EVER, I was astoundingly beautiful, funny and charming) is that I was determined to make sure they ate some kind of fruit every day as they grew up. Even now that they are teenagers, I still hound them about eating a healthy diet, including plenty of fruit. (But since they are teenagers, I doubt if they even hear me). As little tykes, I couldn’t get them to eat as many veggies as fruits, but after I read an article listing the fruits that offered similar nutritional value as their vegetable counterparts, I was okay with just pushing fruit on them. I’m hoping as they grow older they will expand their palates and explore other foods, including a bigger variety of vegetables, but I can only do so much.
Okay, I just got a little off topic there. My love of fruits- right. So this time of year, with summer just around the corner and the bounty of fresh fruits about to explode, I am in my glory with the array of choices in the produce section. Peaches- one of my favorites, aren’t usually in their prime this early in the season, but I bought some this week and was pleasantly surprised at how sweet and juicy they already tasted. But the reason I bought peaches in May was not a nutritional one; it’s because I needed a garnish for my drink this week, the Peach Cobbler Martini. I saw a Peaches and Cream martini recipe on Pinterest awhile back and wanted to create something similar but unique. I am pretty sure I succeeded.
This martini- as Jimmy Fallon’s alter ego Sara (of the “Ewww” skits) would say- is amaze balls! Granted, it contains RumChata, which is in itself amazing, but unfortunately is a bit heavy on the calories. Regardless, one sip of this cocktail and the word ‘calories’ won’t even enter your consciousness. You. Won’t. Care. And anyway, I think it must have less calories than a serving of a real peach cobbler, and it has booze in it, so stop your whining. It’s got the creaminess of the RumChata, the delicious peach flavor from peach vodka and peach nectar, and the luscious almond flavor of amaretto. Think of it as a lighter, frothier version of a peach almond milkshake with vodka in it. In other words, it’s got it all. Enjoy one or two of these as a dessert after your Memorial Day burgers. You can work them off starting Tuesday.
Here’s the recipe-
Peach Cobbler Martini
2 oz peach vodka (I used Three Olives brand)
1 oz RumChata liqueur
½ oz amaretto
2 oz peach nectar (I used Goya, which can be found in the “World” or “Ethnic Foods” aisle)
Pour all ingredients into a cocktail shaker with ice and shake well. Strain into a martini glass and garnish with a peach slice.
If your mom instilled in you a love of fruit, and you’re legally old enough to drink alcohol, this might be the best way to get your daily requirement yet.
