I must apologize for a post so close to Christmas Day, but it has been awhile since I’ve posted a cocktail recipe, and even though things are quite hectic this week, we all need a drink or two to help get us through the holidays. Obviously this holiday season is like none other in recent memory. I absolutely love the holidays, but it feels so weird this year. It’s not like we are normally invited to many holiday gatherings, but the fact that we aren’t going ANYwhere except to the grocery store can really bring a person down.
This sparkling pomegranate punch is easy and delicious, and I have made it several times on Christmas Day when our Pennsylvania family joins us to exchange presents and enjoy a nice Christmas meal together. In a way I am really sad that we won’t be able to do that this year, but I am trying to look on the bright side. I don’t have to clean my house. Since there will only be the four of us, we are splurging on a lobster and crab Christmas dinner. We will still be able to see our favorite people via Zoom. And most importantly in this horrific year, we are all healthy.
So let’s raise a glass to 2021- it HAS to be better than 2020.
Sparkling Pomegranate Punch
1 (750 ml) bottle Champagne or Sparkling wine
1/2 cup lemon vodka
1/2 cup triple sec
1 1/2 cups each pomegranate and cranberry juice (or 3 cups Cran-Pom juice)
1/2 cup freshly squeezed lemon juice
Combine all ingredients except champagne in large pitcher or a punch bowl. Chill for at least two hours and add champagne prior to serving. Add frozen cranberries or pomegranate seeds if desired.
