The oppressive humidity on the East Coast this week has me thinking of Hawaii. I’m sure when you see footage of Hawaii on TV, your first thought might be, “Wow, what a beautiful place to visit,” not, “OMG, I bet it’s humid there.” But let me tell you, it’s humid. Unless the weather has changed dramatically since 2004, when I was there last. Don’t get me wrong, if you have to live with humidity, Hawaii is probably the best place to do it, but just know that it’s THERE, waiting to wilt your perfect hairstyle and melt the makeup off your face.
When I think of Hawaii, I start thinking of pineapples. And when I think of pineapples, I then start thinking of cocktails with pineapple in them. It’s just how my brain works. I bought some pineapple vodka awhile back and my experimenting hasn’t yielded anything noteworthy until now. May I present to you the pineapple watermelon martini! Wow, did this drink surprise me with its fresh lime taste and refreshing fruity flavor.
Here’s the recipe-
Pineapple Watermelon Martini
2 1/2 oz pineapple vodka (I used Skyy)
1 oz watermelon schnapps
juice of one and a half limes
1 oz simple syrup (I use the pre-made kind that’s sold at Giant or Walmart)
Pour all ingredients into a shaker full of ice. Shake vigorously, then strain into a martini glass. Garnish with a chunk of pineapple or watermelon- or both!
My daughter gave me a juicer for my birthday (does she know me or WHAT?), so I wanted to use it for this drink, and I have to say that fresh lime juice and simple syrup is SO much better than any store-bought sour mix out there. This combination was just a bit tart, but tasted so fresh and light. If you have the time, go for fresh limes!
I would have never thought to mix pineapple and watermelon, but it sounds delicious, as does everything you concoct. You are SO making me a drink next time I see you!
